Swedish Meatballs

Ingredients

2 slices fresh white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
3/4 pound ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all-purpose flour
3 cups beef broth
1/4 cup heavy cream

Directions

Preheat oven to 200 degrees F.

Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.

In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.

In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.

Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.

Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.

Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.

Onigiri or Jumokbob ; Rice ball

As many people know, most of Asian people live on Rice. So there are a variety of cooking ways with rice in Asia.
In Japan and Korea, there are almost the same food-you can call also rice ball, called Onigiri(JP) and Jumokbob(KR).
This food is really simple and easy to make and it's just proper to light lunch or sometimes to picnic too.
Personally, I recommend to make it for your special picnic box.

▷ Ingredients

- 4 cups of freshly cooked Japanese-style rice (What kind of rice can you use? See Looking at different types of rice. No, you cannot use long-grain, jasmine, basmati, or Uncle Ben's.)
- 2 sheets of nori seaweed, cut into 3cm/2 inch wide strips
- Salt
- Fillings. Some classic fillings are pickled plum (umeboshi), bonito flakes just moistened with soy sauce (okaka), bonito flakes mixed with pickled plum (umekaka), flaked cooked salted salmon (shake or shiozake), cooked salty cod roe (tarako), chopped up pickles (tsukemono), and tsukudani, various tidbits - bonito cubes, tiny clams, etc. - cooked and preserved in a strong soy-sugar-sauce. Some non-traditional fillings that work well are described below.


▷ Directions

1. The key to making good onigiri is to have freshly cooked, hot rice. You can't make good onigiri with cold rice.
2. Wet your impeccably clean hands with cold water, and sprinkle them with salt. Take 1/4th of the rice and place on one hand. Make a dent in the middle of the rice with your other hand. Put in about 1 tsp or so worth of filling in the dent.
3. Working rapidly, wrap the rice around the filling, and form into a ball. To make the traditional triangular shape, cup your hand sharply to form each corner, and keep turning it until you are happy with the shape. Practive makes perfect.
4. Wrap the rice ball with 1-2 strips of nori seaweed.
5. Repeat for the rest of the rice.

Fried Rice; A basic recipe for fried rice

This is a basic recipe for fried rice that you can add to as desired. If adding other ingredients, increase the number of eggs to 3.
Need a bit of help? Here are step by step photo instructions showing how to make basic fried rice.

Ingredients:

  • 1 - 2 green onions, as desired
  • 2 large eggs
  • 1 teaspoon salt
  • Pepper to taste
  • 4 tablespoons oil for stir-frying, or as needed
  • 4 cups cold cooked rice
  • 1 - 2 tablespoons light soy sauce or oyster sauce, as desired


Preparation:

Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.

Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.

Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.

When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.

Hoegaarden ; my No.1 Beer

My love, My favorite, Hoegaarden Brewery.




One summer early evening, something captured my and my friends' eyes on the way back home after we finished a class.
that is; Hoegaarden draft beer pub!!

I can't forget the day's memory. Blowing cool breeze, with the setting sun, a cup of cold Hoegaarden beer quenched our thirsty at once.
The taste was a bit sweet and fragrant too. Anyways it couldn't have been better!

Hoegaarden is a Belgian brewery. Its origin date back to 14th century and it is named after the village 'Hoegaarden' in Belgium.
This beer has some unique ingredients, coriander and dried Curaçao orange peel known as Laraha, so it has softly sweet and fresh flavor.
In addition to that, it has the natural golden cloudy color because of the secondary addition of yeast.

☆ Additional Tip!

The way to drink Hoegaarden! (bottle)



01. Pouring: pour in cool glass(for Hoegaarden only).
02. Shaking: shake the bottle two or three times to mix the remained of yeast.
03. Pouring till the end: pour till the tip of the glass (around the logo).

[How to make]

Tortilla de Patatas ; Spanish Omelette

Tortilla de Patatas

Let's try to make the typical specialty dish of Spain, Tortilla de Patatas.

▷ Ingredients (for 4-5 people)
- Olive oil 1 cup
- Potatoes 4 (peel and cut into small pieces about 2mm thick)
- White Onion 1 (thinly sliced)
- Eggs 4
- Salt
- (Optional) Jamon York, Chorizo (cut into small pieces about 1cm square)

▷ Directions
1. Pour olive oil in a pan(skillet) to cover the potatoes.
2. Heat the oil over medium heat.
3. Add potato pieces and onions into the oil, and Fry it.
4. Beat eggs in a bowl and Salt to taste.
5. Add Fried Potatoes to beaten eggs. (Add Jamon York or Chorizo to beaten eggs too.)
6. Pour oil in a pan a little, and Pour the mixture in a pan and Cook.
※ Heat over Medium flame, Cook SLOWLY (about 15 min)
7. Flip the pancake over by using a plate of a pan size.
8. Repeat 6&7 twice.
9. Enjoy it!
